Tacoma Youth Symphony & Pumpkin Carving Contest

Where can you attend a concert in costume, watch musicians perform bare-foot and also in costume, and see Darth Vader conduct an orchestra with a light saber? The Tacoma Youth Symphony! We all enjoyed the music. Favorites were: theme to Indiana Jones, Stars War Melody, and Lion King.

Later that same day we attended Westminster's pumpkin carving contest. Seth (Forrest's friend) took 1st place in most Creative in the youth division. Only 1 award, but they figured out how to share it!

What says Fall like kale? Jammed packed with calcium, vit. A and folic acid. A big family hit this season.

BACON AND KALE ADOBO

6 oz. smoked bacon, chopped
1 small onion, finely chopped
3 large cloves garlic, lightly crushed
2 bay leaves
1 lb. kale, stem removed, chopped
2 to 3 tsp. soy sauce
2 - 3 tsp. cider vinegar or coconut vinegar
1/2 tsp. black pepper
1 Thai or serrano chili, crushed

Cook bacon until crisp. Remove leaving some fat. Add onion, garlic, bay leaves and cook until onion golden. Toss in kale stirring until wilted. Add 1 cup water, half bacon, soy sauce and vinegar, pepper and chili. Simmer, covered until kale is tender. Sprinkle with remaining bacon. Yum!
