Buckley joined our family 4 years ago. He was rescued from the tri-cities (E. Washington) area where he was found walking along the highway. We love our little Portugues Water Dog!
What says Fall like kale? Jammed packed with calcium, vit. A and folic acid. A big family hit this season. BACON AND KALE ADOBO 6 oz. smoked bacon, chopped 1 small onion, finely chopped 3 large cloves garlic, lightly crushed 2 bay leaves 1 lb. kale, stem removed, chopped 2 to 3 tsp. soy sauce 2 - 3 tsp. cider vinegar or coconut vinegar 1/2 tsp. black pepper 1 Thai or serrano chili, crushed Cook bacon until crisp. Remove leaving some fat. Add onion, garlic, bay leaves and cook until onion golden. Toss in kale stirring until wilted. Add 1 cup water, half bacon, soy sauce and vinegar, pepper and chili. Simmer, covered until kale is tender. Sprinkle with remaining bacon. Yum!
